2/3 c. raw cashews
1/3 c. oats
dash salt
1-2 Tbsp. agave
1 Tbsp. real maple syrup
1 tsp. vanilla extract
2-4 Tbsp. chocolate chips
Pour the cashews, oats, and salt into a food processor and process for 15-30 seconds, until mixture looks like a meal or course flour. With processor running, pour in agave, maple syrup, and vanilla. Process for 15-60 seconds, or until mixture clumps or balls up. Pour mixture into a small bowl and fold in chocolate chips. Scoop with a mini cookie scoop into a container, and keep refrigerated. Makes about 12 cookie bites.
